The things I look forward to the most with fall are usually food related. The spices, the comfort food and all different types of squashes… Butternut squash is a staple at our house. It’s so easy to just roast it in the oven and there you have a delicious and healthy side dish. I ALWAYS make extra so that I can add to my roasted butternut squash and apple oatmeal (which my kids LOVE).
1 butternut squash, peeled and chopped
1 tbsp. olive oil
1 tsp. ground cinnamon
1/2 tsp. all spice
1/2 tsp. ground nutmeg
pinch of salt
Mix all the ingredients together. Spread onto a baking sheet, and bake at 375F for 30 minutes.
